Blancmange : take 1 oz. of corn flour to 1 point of fresh milk thoroughly mix the corn flour with a little of the cold milk in a basin put the rest of the milk with 1 to 2 oz of sugar into a saucepan and when nearly boiling pour into the basin return the contents to the saucepan and flavour with 1 or 2 drops of essence of vanilla , lemon etc. as desired . then boil for 5 minites stirring all the time .pour into a wetted moud and when cold turnout and serve with in stewed fruits etc.
